INGREDIENTS: 8 cups cauliflower florets, cooked and drained 2 cups vodka sauce 2 tablespoons heavy whipping cream 2 tablespoons melted butter 1/3 cup grated parmesan cheese 1/2 teaspoon kosher salt 1/4 teaspoon freshly ground black pepper 6 slices provolone cheese 1/4 cup freshly chopped basil
COOKING DIRECTIONS: 1. Pre-heat your oven to 375 degrees. Next, taking a large bowl and combine the cauliflower along with the vodka sauce, whipping cream, the butter, the parmesan cheese, kosher salt, and the freshly ground black pepper. Make sure that the cauliflower is well coated and that it is thoroughly mixed. 2. Transfer the cauliflower mixture into a baking dish (roughly 9 x 13). Top the cauliflower with the slices of provolone. 3. Place the baking dish in the oven and cook for roughly 30 minutes, or until the cheese has totally melted and the casserole has started to bubble. 4. After it has cooked, remove from the oven and let sit for about 10 minutes before serving. 5. Once cooled, top the casserole with the fresh basil and serve.
